Cheddar Bacon Bites

Makes 43 servings

Prep Time: Apprx 25 minutes

Bake Time:  Apprx 18 minutes

Total Time:  43

Ingredients 

  • 3 Cups Whole Wheat Flour
  • 1 Tsp Baking Powder
  • 1 Tsp Sea Salt
  • 1 Tsp Black Pepper
  • 8 Tbsp Chives, chopped
  • 2 Cups Shredded Cheddar Cheese
  • 10 slices Applewood smoked bacon, cooked and crumbled
  • 1 Cup plain Greek Yogurt
  • 3 Tbsp Egg Mates
  • 2 Tbsp Water

Directions 

  1. Preheat oven to 400 degrees
  2. Combine the flour, baking powder, salt and black pepper; mix briefly with electric mixer to combine
  3. Add the plain yogurt and mix to combine
  4. Add the grated cheese, green onions, and bacon; stir by hand and mix until just incorporated.
  5. Transfer the dough to a lightly floured surface and pat the dough into a 2 - 4 inch rectangle.
  6. Slice the dough into 59-60 small pieces
  7. In a small bowl combine the Egg Mates and water then whisk together.
  8. Brush each piece lightly with the egg wash.
  9. Transfer the small bites to an ungreased baking sheet
  10. Bake for 18 minutes until very lightly browned on the sides
  11. Allow to cool on baking sheet for 10 minutes before digging in 
  12. Store cookies in an airtight container for up to one week

  • 3 apples
  • 4 celery stalks
  • 1/2 Lemon
  • 1 Zucchini

  • 2 Oranges, peeled
  • 8 Carrots
  • Bunch Mint Leaves
  • 1/2 Pineapple
  • 1/2 Lemon, peeled
  • 1 Thumb size Ginger Root

  • 3 Apples
  • 3 Celery Stocks
  • 2 Pears
  • 1/2 Cup Spinach
  • 1 thumb sized piece ginger

  • 8-10 Carrots
  • 1-2 Mangoes

White Chocolate Strawberry Cookies 

Makes 26 servings

Prep Time: Apprx 10 minutes

Bake Time:  Apprx 12 minutes

Total Time:  24

Ingredients 

  • 1 1/2 Cups Flour
  • 6 Tsp Truvia Baking Blend
  • 24 Tsp Brown Sugar Splenda Blend
  • 1/2 Cup Plain Greek Yogurt
  • 3 Tbsp Egg Mates
  • 1/2 Tsp Sea Salt
  • 1/2 Tsp Baking Soda
  • 1 Tsp Vanilla Extract
  • 1 Cup Strawberries, chopped
  • 8 Tbsp White Chocolate Chips

Directions 

  1. Preheat oven to 350 degrees
  2. Line baking sheets with parchment paper
  3. Mix all ingredients but the strawberries and white chocolate into a bowl with an electric mixer on low until well combined.
  4. On low add in the strawberry followed by the white chocolate and mix until just combined.
  5. Using a small cookie scoop, about 1 Tbsp drop dough about 1 in apart onto prepared baking sheets
  6. Bake for 12 minutes until very lightly browned on the sides
  7. Allow cookies to cool on baking sheet for 10 minutes before digging in 
  8. Store cookies in an airtight container for up to one week

White Chocolate Mango  Cookies 

Makes 52 servings

Ingredients 

  • 3 Cups Flour
  • 1 Tbsp Cornstarch
  • 1 Tsp Sea Salt
  • 1 Tsp Baking Powder
  • 12 Tsp Truvia Baking Blend
  • 36 Tsp Brown Sugar Splenda Blend
  • 1 banana, mashed
  • 6 Tbsp Egg Mates
  • 2 Tsp Vanilla Extract
  • 1/4 Cup water
  • 1 1/2 Cups Mango, finely chopped
  • 1 Cup White Chocolate Chips

Directions 

  1. Preheat oven to 350 degrees
  2. Line baking sheets with parchment paper
  3. Mix all ingredients but the mango and white chocolate into a bowl with an electric mixer on low until well combined.
  4. On low add in the mango followed by the white chocolate and mix until just combined.

Oatmeal Mango Coconut Cookies

Ingredients 

  • 1 1/2 Cup Oats
  • 3/4 Cup Flour
  • 1 Cup Special K, mashed
  • 1 Tbsp Cornstarch
  • 1/2 Tsp Baking Powder
  • 1/4 Tsp Sea Salt
  • 1/2 Tsp Ground Ginger
  • 1/2 Tsp Ground Cinnamon
  • 1/4 Tsp Ground Cloves
  • 2 Bananas, mashed
  • 3 Tbsp Egg Mates
  • 1 Tsp Vanilla Extract
  • 1 1/2 Cup Mango, finely chopped

Directions 

  1. Preheat oven to 350 degrees
  2. Line baking sheets with parchment paper
  3. Mix all ingredients but the mango into a bowl with an electric mixer on low until well combined.
  4. On low add in the mango and mix until just combined.
